I came across these fun little bites on the Betty Crocker website. I thought they looked so cute and fun I just had to try and make them.
These are super easy because you get to use the box mix. Start out with Betty Crocker white cake mix and prepare according to the directions.
Once it is all mixed up separate the batter equally into 4 bowls and color each bowl a different color.
I chose neon pink, purple, teal and yellow.
Next scoop the different color batters into a mini-muffin pan. My batter filled the mini-muffin pan 3 times. Be sure to make even amounts in each color because we are only using the tops of these little cupcakes and each popper takes 2 tops.
Once all of the cupcakes are done make sure they are completely cooled before the next step.
Now it is time to cut off the tops of all the minis. You can save the bottoms to make cake balls later on which is what I plan to do.
Once all your mini tops are set to go you can mix up the filling. This recipe is super easy and only has 3 ingredients:
1 1/2 cups of Marshmallow creme
3/4 cup softened butter
1 1/4 cup confectionery sugar
You beat the marshmallow creme and butter together and then add in the sugar until fluffy.
Next thing is to fill your piping bag with the filling and get to work.

How cute right?!? I think these would be perfect for a children's birthday party or a carnival themed celebration!
