Easter Cupcakes!

For Easter I had a few orders and made an array of flavors including chocolate peanut butter cup, strawberry margarita, banana caramel, Lemon and Vanilla!

For the lemon and vanilla cupcakes I wanted to decorate them with cute Easter decorations. I used Peeps and Jelly Beans! I think they came out very cute!










I think the girls definitely enjoyed them!

Caramel Banana Cupcakes

I did some baking for a fundraiser we went to last weekend. I made 4 different kinds of cupcakes including the Strawberry Margarita cupcakes in my last post.

When I found this recipe I started drooling. I love love love caramel in any way, shape or form it comes. I am also a fan of Bananas so this seemed like a perfect pairing!

The whole recipe is pretty easy.
You can start with your go to vanilla cupcake recipe and add in a package of banana cream pudding mix. This should make your batter a nice yellow color.

Once you scoop your batter into your muffin pans place a soft chewy caramel square in the center of each cupcake. The cupcake will bake up around the caramel piece.





As usual once they are cooled you can frost them!
I think there are a couple of options for the cupcake. You could make a banana buttercream or a caramel buttercream. For this occasion I chose the caramel.

Once the were frosted I melted a few of those chewy caramels and drizzled them over the top of the cupcakes!





The reviews I got for these were great! They were even requested as part of my Easter orders!

Frosting Recipe: Caramel Buttercream

1/2 cup softened butter
1 cup brown sugar
1/4 cup of milk
1 tsp Vanilla
2 cups confectionery sugar

Directions:
Cream together butter, brown sugar, vanilla and 1/2 the milk. Add the confectionery sugar and incorporate completely adding the rest of the milk a little at a time until you reach the desired consistency.

Strawberry Margarita Cupcakes

I have been craving strawberry margaritas lately... maybe it is the hint of nice weather that got me thinking of them. I decided to turn my craving into a cupcake!!

I googled for a recipe and then tweeked it make my own.
While I was making these I got to use my zester for the first time! I love it! First I love the smell of limes so zesting the lime had my whole kitchen smelling so fresh and citrus... total love <3





Ok now onto the frosting!

Before I frosted these I wanted to make a simple syrup with tequila to enhance the Margarita flavor.. however these are for a fundraiser and thought it best not to include the tequila in case some kids got their hands on these! I will save the tequila for next time!

The frosting I made is quite decadent.

It encompasses the strawberry flavor with fresh lime and yummy goodness!

Frosting Recipe:

1 Cup softened butter
Half of a lime zested and squeezed
1/4 cup strawberry margarita mix
2lbs of confectionary sugar
water

Directions:
Mix butter, lime zest, fresh lime juice and margarita mix until combined. Add in 2lbs of confectionary sugar and incorporate until smooth. (add water 1tbsp at a time to reach desired consistency. If too thin add more conf. sugar)

Suprise Cake Balls!

Remember those left over mini cupcake bottoms I had leftover from the cupcake poppers?
Well I turned them into cake balls!

I loved the bright colors of these cake balls.

I did find when making these that coating them in white chocolate wasn't the smartest idea since you can sort of see the color through the chocolate. Next time I make bright colored cake balls I will be sure to use a darker colored chocolate.





Also, here is a fun thought! These would be a great idea if you are having a baby and want to reveal the sex of the baby to friends and family in a cute way. Simply make then cake colored pink or blue and then coat them in a neutral color or simply in milk chocolate and then when your nearest and dearest bite into them they will know if it is a boy or girl!

Cupcake Poppers

I came across these fun little bites on the Betty Crocker website. I thought they looked so cute and fun I just had to try and make them.

These are super easy because you get to use the box mix. Start out with Betty Crocker white cake mix and prepare according to the directions.
Once it is all mixed up separate the batter equally into 4 bowls and color each bowl a different color.

I chose neon pink, purple, teal and yellow.



Next scoop the different color batters into a mini-muffin pan. My batter filled the mini-muffin pan 3 times. Be sure to make even amounts in each color because we are only using the tops of these little cupcakes and each popper takes 2 tops.



Once all of the cupcakes are done make sure they are completely cooled before the next step.



Now it is time to cut off the tops of all the minis. You can save the bottoms to make cake balls later on which is what I plan to do.

Once all your mini tops are set to go you can mix up the filling. This recipe is super easy and only has 3 ingredients:

1 1/2 cups of Marshmallow creme
3/4 cup softened butter
1 1/4 cup confectionery sugar

You beat the marshmallow creme and butter together and then add in the sugar until fluffy.

Next thing is to fill your piping bag with the filling and get to work.

How cute right?!? I think these would be perfect for a children's birthday party or a carnival themed celebration!

Banana Muffins

Banana muffins are definitely one of my favorite muffins. I think they are the perfect breakfast on the go... or they are great for an afternoon snack!

Today I took the shortcut when I made these. I had a banana bread mix in the pantry and some very ripe bananas.

I mashed up one of the bananas and mixed it with the batter and then scooped it into my muffin pans.



About 14 minutes later my house smelled like delicious Banana Muffins!



Tomorrow morning I will be enjoying one of theses with a little "I can't believe it's not butter"

Easter Sugar Cookies

I know it isn't Easter yet... but I bought some new cookie cutters and wanted to use them sooooo... in my house it was time for easter cookies!

I was excited to make these cookies. I have never really seriously decorated sugar cookies, but I always see all these really adorably decorated cookies and it made me wanted to give it a try.

About 2 hours into this, I seriously regretted my decision to take on this project! HA!
I am not saying I would never try this again but maybe next time I will space it out over a couple of days.

Ok now onto the process...

I started out making the sugar cookie dough using the same recipe as I did in THIS POST.
After the cookie dough was done I put it in the fridge to chill for a couple hours.
Next step was rolling and cutting, rolling and cutting... baking, rolling and cutting.



After another hour the cookies were all baked off and cooling and I moved on to making royal icing.
While I was making my icing I found THIS tutorial very helpful.



Decorating the cookies is a multi-step process...

First you outline the cookie


Then flood the cookie to fill it all in





The cookie then has to dry for several hours and once they are dry you can add some details with thicker royal icing!





My finished cookies were far from perfect but I am satisfied with my first attempt and of course the most important part... they tasted yummy!



I decided to wrap a few of these up and ship them off to my favorite pregnant lady living in Texas! I hope her and her soon to be born baby girl enjoy them!
